Dad's Miracle Whip Hack

1½ cups sunflower oil or light olive oil
1 egg
2 egg yolks
2 Tbsp. water
1 Tbsp. lemon juice
2 Tbsp. powdered sugar
½ tsp. salt
½ cup cold water
2 Tbsp. corn starch
2 Tbsp. apple cider vinegar
1 tsp. powdered mustard
½ tsp. garlic powder
½ tsp. paprika
½ tsp. onion powder
½ tsp. ground white or black pepper (optional)
½ tsp. ground cayenne pepper (optional)
¼ tsp. xanthan gum (optional)

I recommend using a blender or an immersion blender and a quart jar.

Add the one egg, egg yolks, and 2 Tbsp. water, begin blending on high and begin to very slowly drizzle the oil into the mixture while continuing to blend and until the mixture thickens into mayonnaise. Blend into this mixture the powdered sugar, salt, and lemon juice until well combined.

Into a heavy-bottomed saucepan, add the cold ½ cup water, vinegar, and corn starch, stir the cornstarch into the cold water to mix, then add the powdered mustard, garlic powdered mustard, paprika, and onion powder (white and cayenne peppers if wanted).

Begin heating on medium heat whisking continuously, it will come together and thicken very quickly, thicken to the consistency of mayonnaise.

Slowly spoon this mixture into and blend it into the mayonnaise.

If desired for additional thickening, xanthan gum must be blended slowly into the mixture.

Chill in the refrigerator for 2 hrs. to allow for flavors to come together.
